National Oreo Day- Oreo Poke Cake
Today is National Oreo Day, what better way to celebrate that to make this easy and super yummy Oreo Poke Cake. This recipe takes a few minutes (minus the cake baking time) and is guaranteed to put a smile on people's faces.
Ingredients
1 box Chocolate (milk, devils food, ect) cake mix + Ingredients to make the cake
8 oz Cool whip
1/2 pack Oreo cookies
2 cups Milk
1 large box Oreo pudding, instant
Directions
1. Preheat the oven to 350.
2.Crush up the Oreos into large pieces.
3. Prepare the chocolate cake by following the box directions.
4. Coat sides and bottom of a 9x13 dish with shortening.
5. Pour batter into the prepared dish.
6. Bake this for 30 minutes or until a toothpick can be inserted in the middle and can come out clean.
7. Whisk together milk and pudding mix until it is smooth.
8. Poke holes all around the top of the cake.
9. Pour the pudding evenly over the cake to allow it to soak into all of the holes.
10. Sprinkle the top with about half of the chopped Oreos.
11. Allow this to cool completely.
12. Top with the whipped topping and sprinkle with the remaining chopped cookies.
13. Refrigerate for at least 1 hour.

National Creative Ice Cream Flavors Day!
July 1st is National Creative Ice Cream Flavors Day!
If you follow this blog much, you know that I love "creative" ice cream flavors. With summer being in full swing I want to get my ice cream maker out and get to trying some new flavors.

Christmas in the Country 2015- Gift Reveal
I have been in a rut, a "no motivation to blog rut." I use my few minutes of writing inspiration for work, speaking of work that takes up 90% of my life. When you aren't married or have kids people assume you can spend your "free time" devoted to work. This explains my absence. When I signed up for Christmas in the Country 2015, I hoped this would help me renew my enthusiasm for blogging, I promised the hosts for CITC that I would be back into blogging and the reveal is just what I needed to get me up and going. With this being said, it doesn't mean I will have a new post every day or even every week, but I will have it once a month and hopefully more than that.
My gift came from Stacy, who blogs at The Backroad Life. I am pretty proud of her for being able to pick out such fitting gifts, since I didn't put many helpful hints in my "likes" list when I signed up for CITC. Then when she went to my blog to research about me she didn't have much to go on for the last few months. BUT....she did great!
Her wrapping skills ..........
She included homemade caramels ( she posted her recipe on her blog, so go check it out!)
The main clue or hint on the "likes" list was that I love local, handmade, personal items. I was excited to see that Stacy made some of my gifts. You can check out her shop Sew.Stitch.Create on Etsy.
Look at this fun little pennant garland:

The weather is finally getting cold enough for me to wear the flannel infinity scarf she sewed.
In my limited list, I did put that I loved coffee, so she included a candle that smells AMAZIN= Coffee meets cream brulee.
Finally, a rustic picture frame. How did she know I am on a picture frame kick?? My mom absolutely loves the Red Shed brand so she was a little jealous.
My gift was sent to Laurie Link who just happens to be one of the hosts for CITC. I am going to admit, I was a little nervous picking out her gift. I wanted it to be "perfect" I mean, she has a lot of followers and is one of the hosts, so you know everyone will see what I gave her. You can check out her blog Country LINKed.

2 Soups for You!
With Christmas around the corner and winter weather here, there have been parties and soup has been the main course. I have had a few requests for these recipes (Tomato Basil Parm Soup & Stuffed Pepper Soup) They have been adapted from a variety of recipes and made to fit what I like.
Ingredients
1 (14 oz) can diced tomatoes, with juice
1 (14 oz) can Italian style diced tomatoes, with juice
1 cup finely diced celery
1 cup finely diced carrots
1 cup finely diced onions
1 teaspoon dried oregano or 1 Tablespoon fresh oregano
1/4 cup fresh basil
4 cups chicken broth
½ cup flour
1 cup grated Parmesan cheese (I used the kind already done, that you put on spaghetti)
½ cup butter
1 cup half and half, warmed
1 c. milk
1 teaspoon salt
¼ teaspoon black pepper
Instructions
Add tomatoes, celery, carrots, chicken broth, onions, oregano, basil, and leaf to a large slow cooker (Cover and cook on LOW for 5-7 hour) or in a stock pot and cook until carrots, celery, and onions were tender.
At this point I added all of the vegetables to a blender and blended until smooth. If you prefer a chunkier texture you can leave it as is or even blend just some of it. Return blended veggies back to the slow cooker.
About 30 minutes before serving prepare the roux. Melt butter over low heat in a skillet and add the flour. Stir roux constantly with a whisk for 5-7 minutes. Slowly whisk in 1 cup hot soup. Add another 3 cups and stir until smooth. Add all back into the slow cooker. Stir and add the Parmesan cheese, warmed half and half, salt and pepper.
Cover and cook on LOW for another 30 minutes or so until ready to serve.

Stuffed Pepper Soup
FYI!!! For this soup I used the leftover Tomato Basil Parmesan Soup to thicken and in place of some of the tomato products suggested
Ingredients
1-2 lb (however meaty you want it!) lean ground beef
2 Tbsp olive oil, divided
Salt and freshly ground black pepper
1 small yellow onion chopped (1 cup)
1 can roasted red peppers
2 cloves garlic, minced
1 (14.5 oz) cans diced tomatoes with onions
1 (14.5 oz) cans diced tomatoes
1 (15 oz) can tomato sauce
1 (14.5) can beef broth
2 1/2 Tbsp chopped fresh parsley, plus more for garnish
1/4 tsp dried oregano
1 cup uncooked long grain white
Cheddar or mozzarella cheese, for serving (optional)
Directions
In a large pot heat 1 Tbsp olive oil over medium heat, once hot add beef to pot and season with salt and pepper. Cook, stirring occasionally while breaking up beef, when beef is nearly browned at onions and garlic until browned. Drain beef and return to pot.
Pour in diced tomatoes, tomato sauce, beef broth and add parsley, and oregano then season with salt and pepper to taste. Bring just to a light boil, then reduce heat to low, cover and simmer, stirring occasionally, 30 minutes.This is where I added in the leftover soup.
While soup simmers, prepare rice according to directions listed on package, then once soup is done simmering stir in desired amount of cooked rice into soup*. Serve warm topped with optional cheese and garnish with fresh parsley.
*For a thinner soup don't add all of the rice and for a thicker heartier soup add it all. Also, if you plan on having it for leftovers the next day then don't add the rice to the pot of soup, just add it to each individual bowl, then reserve the rice in a separate container in refrigerator to add to the soup the next day (otherwise it would turn into mush).

National Zucchini Day & Recipe
So, I heard through the grape Zucchini "vine" that today is National Zucchini Day.
It has always been a joke in our family & community about giving away this veggie. When going to church everyone was told to roll up your windows and keep your doors locked, to keep the....... Zucchini out. I ran across this cute idea and if we had a plant that was producing like crazy or if I even had Zucchini growing at my place I think I would do this.
How fun would this be to come home to???
If you have more Zukes than you can handle or arrive at home with these on your door, try this recipe. I made this with Hubbard Squash in previous post but works great with Zucchini!

Pinterest Test: Mexican Street Corn Pasta Salad
Oh My, this is good! I think this would be a perfect 4th of July salad. Especially with county fairs upon us, this reminds me of the grilled ears of corn you can't resist.

Ingredients:
8 ounces radiatore pasta
Dressing:
1/3 cup mayonaisse
1/3 cup sour cream
zest of 1 lime
1 teaspoon chile powder, plus more for dusting top
2 tablespoons fresh lime juice plus more for serving
Salad:
3 cups corn cut from grilled corn on the cob (3-4 ears)
1 diced avocado
1/4 cup chopped green scallions
1/2 cup Cotija or feta cheese, crumbled
3 tablespoons grated Parmesan cheese
2 tablespoons fresh chopped cilantro (or parsley or basil)
coarse salt and fresh black pepper, to taste
Instructions:
- Cook the pasta to al dente in plenty of salted boiling water.
- Meanwhile whisk all the dressing ingredients together in a small bowl until smooth and creamy.
- Drain the cooked pasta and add to a large bowl with a tiny bit of the dressing - toss to coat, cover and refrigerate until cool.
- Once cooled mix in the corn, avocado, scallion, both cheeses and the cilantro. Add the dressing a little at a time tossing gently to coat. Season to taste with salt and pepper.
- Serve chilled or at room temperature with a dusting of chile powder and lime wedges.

Theme Thursday: Easter Tree
A few months back I mentioned there was a tree in my county that is decorated monthly with a theme. This month of course is Easter.
I met the "owner" and decorator this past Friday. I was with a community member headed to visit a local dairy and she said,"Right up there on the left is the dairy." I exclaimed, "The one by the Theme Tree!?!"
"Yep, that's the place," she said with a chuckle. When I met the decorator, I told her to keep it up and how I enjoyed the changing themes!

Bourbon Ham Sliders
HOLY MOLY these are so stinking yummy- developed by yours truly. I have seen other similar recipes but this is "the one"
1 can Grands Jr Butter Tasting Biscuits (10 count)
leftover ham slices ( great way to use up leftovers after the Holidays)
10 slices of sharp cheddar cheese
Whole grain mustard
Bayou Bourbon Glaze from Tastefully Simple
Miracle Whip
Preheat oven to 400.
Lightly spray a 9-inch pan with cooking spray. Set aside.
Separate each biscuits into two layers. Place half of the biscuits in pan, spread with mustard, top with ham in the bottom of prepared pan. Spread about 1 Tablespoon of Bourbon sauce on top of ham. Place a slice of cheese on top of ham. Then spread a light layer of Miracle Whip on the biscuit and then place that on top.
Bake 12-15 minutes, until golden brown. Optional to drizzle a little Bourbon sauce on top while still hot. Serve immediately.

Its a NEW Year!
I want to wish everyone a Happy, Safe, & Blessed New Year. My intentions were to write a great blog post, I had been reading others and thinking I needed to do something like this. Well, I found this list of 20 Things To Let Go Of Before The New Year and I thought you all would get more by reading this than anything I could probably say. I started to comment on the numbers individually, then I realized I could go on and on about almost each number. This list is great
So here they are:
Here are 20 things to let go of in order to reach unlimited happiness.
1. Let go of all thoughts that don't make you feel empowered and strong.
2. Let go of feeling guilty for doing what you truly want to do.
3. Let go of the fear of the unknown; take one small step and watch the path reveal itself.
4. Let go of regrets; at one point in your life, that “whatever” was exactly what you wanted.
5. Let go of worrying; worrying is like praying for what you don’t want.
6. Let go of blaming anyone for anything; be accountable for your own life. If you don’t like something, you have two choices, accept it or change it.
7. Let go of thinking you are damaged; you matter, and the world needs you just as you are.
8. Let go of thinking your dreams are not important; always follow your heart.
9. Let go of being the “go-to person” for everyone, all the time; stop blowing yourself off and take care of yourself first … because you matter.

Eggnog Pound Cake
I made this tasty little cake this past Friday for a Christmas party.Quote from my best friend, " O my gosh,Its really good, it tastes just like eggnog!"

Ingredients
- 1 (16-oz.) package pound cake mix
- 1 1/4 cups eggnog
- 2 eggs
- 1/2 tsp ground nutmeg
- 1/2tsp vanilla
Preparation
- 1. Preheat oven to 350°. Beat all ingredients together at low speed with an electric mixer until blended. Increase speed to medium, and beat 2 minutes. Pour into a lightly greased 9- x 5-inch loaf pan.***(This wasn't big enough, so one 9x5, and then 2 mini loaves)
- 2. Bake at 350° for 1 hour to 1 hour and 5 minutes or until a long wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan to wire rack, and cool completely (about 1 hour).

Hot Jalapeño Corn Dip
This is the time of year for Christmas parties, and parties mean food!

I found this tasty looking Hot Jalapeño Corn Dip over at The Sunny Side of Life and decided to give it a try. Personally, I would add more Jalapeños make it a little more spicy. Also, it isn't too shabby cold before baked.
Ingredients
- 2 cans sweet corn, drained
- 2 jalapeño peppers, seeded and minced (Or equivalent of canned or jar version. More or less to your personal taste)
- 2 green onions, chopped
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup shredded monterey jack cheese
- 1/2 cup cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon chili powder
- dash of hot sauce
- salt and pepper to taste
Instructions
- Preheat oven to 375˚.
- In medium bowl, mix together mayo, sour cream, spices, and hot sauce.
- Fold in corn, jalapeño peppers, onions, and 3/4 cups of blended cheese.
- Place in greased 2 qt. baking dish, and top with remaining 1/4 cup cheese.
- Bake in preheated oven for approx. 20 min. or until cheese is golden brown and bubbly.
- Serve with tortilla chips.
Notes
- You can substitute fresh or frozen corn for the canned corn. I simply used what I had on hand.
- You can also substitute 1 cup of mexican blend cheese for the monterey jack and cheddar.

I LOVE agriculture!
I love agriculture and have seen quite a few funny and/or sweet ag/country/western Valentines around, but this one stood out to me and couldn't help but share. I also thought of my friend Kelsey who works for the Nebraska Corn Board when I saw this!

Bethlehem Revisited
One of the best experiences I have had in years. In the little town of Keats, KS a church puts on an interactive "play" called Bethlehem Revisited. Its amazing, I honestly don't even have the words to describe how awesome it is! The entire time I am walking through this living museum/play I kept saying," Oh My Gosh, this is awesome!"

We had a guide, that started off by making us feel like we were back hundreds of years ago.

These "prophets" were giving background information.
Then we went to see where the angel came to visit Mary.
Its amazing how these sets/structures were built in the middle of a farmers pasture. I would say this takes up at least one acre, and includes over 100 volunteers.
Onto Bethlehem.
Here the Roman Guard took a census ( I haven't heard how many people attended this year)
This was my favorite part.....While walking through the marketplace you felt a part of it, as if you were really there.
And finally.......
There were more parts that were absolutely amazing. I wish each and everyone of you could have been there! I was truly blessed by being able to attend this year.

National Agriculture Day
You, I and 142 other people ate today because of one American farmer. We officially recognize our farmers and all they do to make our lives better on March 8, National Ag Day. Farmers not only produce food, fiber and fuel, they contribute to a strong economy. In fact, the total impact of agriculture and agribusinesses account for 20 percent of the state’s economy, according to Kansas Inc.
The role of farmers will become even more critical with the exploding world population. We reached 7 billion people in 2011. The United Nations forecasts that world population will reach 9 billion by 2050 – and that farmers will have to produce 70 percent more food than they do today.
Be part of agriculture, if even just for one day. Take a drive in the country with your family, for instance. There’s no prettier green than winter wheat fields waking from winter dormancy. And, wave if you see a farmer. I guarantee they’ll wave back.

Cupcakes for your Cupcake-Ta'Da Cupcakes
I was introduced to Ta'Da Cupcakes this past December when I set up for a Christmas Vendor Fair. They were the booth next to me. I'm not sure why, but it seems at every event I go to, the food people are way to close :)
I'm not sure how busy they are this Tuesday, but what a fun treat to order for your Valentine.
