National Oreo Day- Oreo Poke Cake


Today is National Oreo Day, what better way to celebrate that to make this easy and super yummy Oreo Poke Cake. This recipe takes a few minutes (minus the cake baking time) and is guaranteed to put a smile on people's faces. 

Ingredients
1 box Chocolate (milk, devils food, ect) cake mix + Ingredients to make the cake
8 oz Cool whip
1/2 pack Oreo cookies
2 cups Milk
1 large box Oreo pudding, instant

Directions
1. Preheat the oven to 350.

2.Crush up the Oreos into large pieces.

3. Prepare the chocolate cake by following the box directions.

4. Coat sides and bottom of a 9x13 dish with shortening.

5. Pour batter into the prepared dish.

6. Bake this for 30 minutes or until a toothpick can be inserted in the middle and can come out clean.

7. Whisk together milk and pudding mix until it is smooth.

8. Poke holes all around the top of the cake.

9. Pour the pudding evenly over the cake to allow it to soak into all of the holes.

10. Sprinkle the top with about half of the chopped Oreos.

11. Allow this to cool completely.

12. Top with the whipped topping and sprinkle with the remaining chopped cookies.

13. Refrigerate for at least 1 hour.

National Creative Ice Cream Flavors Day!

July 1st is National Creative Ice Cream Flavors Day!


If you follow this blog much, you know that I love "creative" ice cream flavors. With summer being in full swing I want to get my ice cream maker out and get to trying some new flavors.

With this weekend being a 3 day weekend and holiday, I am hoping to try out some new homemade ice cream recipes.

Strawberries & Cream Overnight Oats

One of my favorite Overnight Oatmeal Recipes is Strawberries & Cream! Its easy, quick and oh so yummy!


STRAWBERries & CREAM  
OVERNIGHT OATS
Serves: 1
INGREDIENTS
  • ½ cup Vanilla Almond Milk
  • ⅓ cup Vanilla Greek Yogurt
  • ⅓ cup old fashioned oats
  • 1 teaspoon chia seeds
  • 3 strawberries, sliced

INSTRUCTIONS
  1. Combine ingredients in a  jar and refrigerate overnight.

Overnight Oats Simplified 1-2-3

Overnight Oats seem to be the rage right now. I had been pinning recipes but had avoided making them thinking I might not like them and then I would have wasted  all that time, effort, and ingredients

Well good new, I like them and they are EASY to make AND you probably have the ingredients on hand, I did!

Step 1. Locate jars. I used canning jars and recycled sauce jars I had been saving. 

Tip: I have found prepping for a week makes things so much easier

Step 2. Gather ingredients. I had all of these ingredients, but the Chia/Flax Seed mix, which I happened to find on sale for $4/bag

Tip: I created a " Overnight Oats Shelf" This is where I keep all the dry, non-perishable items. Its handy to have it in one place . 







The perishable/refrigerated items are again something you will probably have on hand. 
 While I love real cow's milk, most Overnight Oat recipes call for Almond milk. There are less calories and I like the vanilla flavor :) Most recipes call for yogurt & a milk of some sort 
Step 3: Mix. I usually mix all the dry ingredients for the recipe and then add the wet ingredients the night before. However, you can mix both and they will stay fresh in the fridge for 3-4days. 


I found this handy dandy spatula like tool a year ago and bought it because it was cool and different. Incase you didn't know. I am slightly obsessed with kitchen gadgets. Its the handiest thing for mixing in the jars. Its my Overnight Oats Tool!

You can find this tool at Chefn.com (man I wish this were a give away post) Beware, they have some cool kitchen gadgets. I am not responsible if you spend $$$$ 

As far as Recipes, they pretty much follow the 1-2-3 rule as well. There are numerous recipes out there and I will be posting my favorite next Monday for "Menu Monday"

13 Recipes to Use Leftover Mashed Potatoes

This post came out of necessity. Last night I helped host a large event, with a large amount of leftover mashed potatoes. Thank goodness for 4-Hers and 4-H parents helping serve and keep things going smoothly.
I gave a friend a roaster full of them and told her to be creative. As I was getting ready to send her an email with a list of recipes and ideas I thought why not make this a blog post to help others!


Enjoy these 13...or 14 ideas, from myself and others! I could go on forever, but this is a start.

1. Freeze them! Yes you can freeze mashed potatoes, I learned this from my grandma. If you don't have time to try out the other 9 ideas I will list, this might be the best option for the moment. You can either freeze them in a pan/tupperware or bag. When ready to use, thaw and mix with a handheld mixer to "fluff." I ran across  this cleaver ideas from The Yummy Life.

2. Shepard's Pie

3. Potato Pancakes

4. Potato Soup

5. Potato Croquettes.

6. Gnocci, I love this gnocci, so  way to use of leftovers and have these lovelies is great. Check out this recipe.

9.Potato Puffs, here is a recipe I plan to try.

13. Last and definitely not least.......Mashed Potato BACON Bombs!   Bacon, cheese, and potatoes, what more can you need?! Think I will try this recipe out tomorrow.

2 Soups for You!

With Christmas around the corner and winter weather here, there have been parties and soup has been the main course. I have had a few requests for these recipes (Tomato Basil Parm Soup & Stuffed Pepper Soup)  They have been adapted from a variety of recipes and made to fit what I like.


 Tomato Basil Parmesan Soup

Ingredients
1 (14 oz) can diced tomatoes, with juice
1 (14 oz) can Italian style diced tomatoes, with juice
1 cup finely diced celery
1 cup finely diced carrots
1 cup finely diced onions
1 teaspoon dried oregano or 1 Tablespoon fresh oregano
1/4 cup fresh basil
4 cups chicken broth
½ cup flour
1 cup grated Parmesan cheese (I used the kind already done, that you put on spaghetti)
½ cup butter
1 cup half and half, warmed
1 c. milk
1 teaspoon salt
¼ teaspoon black pepper

Instructions
Add tomatoes, celery, carrots, chicken broth, onions, oregano, basil, and  leaf to a large slow cooker (Cover and cook on LOW for 5-7 hour) or in a stock pot and cook until carrots, celery, and onions were tender.
At this point I added all of the vegetables to a blender and blended until smooth. If you prefer a chunkier texture you can leave it as is or even blend just some of it. Return blended veggies back to the slow cooker.
About 30 minutes before serving prepare the roux. Melt butter over low heat in a skillet and add the flour. Stir roux constantly with a whisk for 5-7 minutes. Slowly whisk in 1 cup hot soup. Add another 3 cups and stir until smooth. Add all back into the slow cooker. Stir and add the Parmesan cheese, warmed half and half, salt and pepper.
Cover and cook on LOW for another 30 minutes or so until ready to serve.

 Stuffed Pepper Soup

FYI!!! For this soup I used the leftover Tomato Basil Parmesan Soup to thicken and in place of some of the tomato products suggested

Ingredients

1-2 lb (however meaty you want it!) lean ground beef
2 Tbsp olive oil, divided
Salt and freshly ground black pepper
1 small yellow onion chopped (1 cup)
1 can roasted red peppers
2 cloves garlic, minced
1 (14.5 oz) cans diced tomatoes with onions
1 (14.5 oz) cans diced tomatoes
1 (15 oz) can tomato sauce
1 (14.5) can beef broth
2 1/2 Tbsp chopped fresh parsley, plus more for garnish
1/4 tsp dried oregano
1 cup uncooked long grain white 
Cheddar or mozzarella cheese, for serving (optional)

Directions

In a large pot heat 1 Tbsp olive oil over medium heat, once hot add beef to pot and season with salt and pepper. Cook, stirring occasionally while breaking up beef, when beef is nearly browned at  onions and garlic until browned. Drain beef and return to pot.

Pour in diced tomatoes, tomato sauce, beef broth and add parsley, and oregano  then season with salt and pepper to taste. Bring just to a light boil, then reduce heat to low, cover and simmer, stirring occasionally, 30 minutes.This is where I added in the leftover soup.
While soup simmers, prepare rice according to directions listed on package, then once soup is done simmering stir in desired amount of cooked rice into soup*. Serve warm topped with optional cheese and garnish with fresh parsley.
*For a thinner soup don't add all of the rice and for a thicker heartier soup add it all. Also, if you plan on having it for leftovers the next day then don't add the rice to the pot of soup, just add it to each individual bowl, then reserve the rice in a separate container in refrigerator to add to the soup the next day (otherwise it would turn into mush).

Roasted Honey & Cinnamon Sweet Potatoes

This is a perfect fall recipe, well actually its just a perfect recipe for anytime of the year! But with fall being around the corner if you need a little help getting in the spirit try these.
I adapted it from Buns in my Oven blog 


INGREDIENTS:

4 large sweet potatoes, peeled and cut into 1 inch cubes
4 tablespoons honey
3 tablespoons olive oil
2 1/2 teaspoon cinnamon
1 teaspoon salt
1 teaspoon pepper
*All seasonings can be adjusted according to taste, this is what I went with and the family LOVED them!!

DIRECTIONS:

Preheat oven to 375 degrees.
In a large bowl, combine the honey, olive oil, cinnamon, salt, and pepper. Add the sweet potatoes and toss to coat.
Dump potatoes onto a large rimmed baking sheet. Roast for 25-30 minutes, stirring halfway through cooking.

Crockpot Southwestern Style Chalupas

Last Thursday we had a little cold spell so I kinda started to get excited about crockpots, soups, and all things Fall.

I had been waiting to try a recipe I found called "Southwestern Style Chalupas"
I ended up totally revamping the recipe, starting with the serving size. I really didn't' feel like I wanted to be eating this for a week straight so I downsized the recipe.

INGREDIENTS:
1 (2lbs) pork loin
1 can  black/pinto beans ( I used black eyed peas)
1 (4 ounce) can chopped green chili peppers
3 tablespoons chili powder
1 tablespoon cumin seed
2 teaspoon dried oregano
2 teaspoons garlic salt
pepper
1c. water
1 (16 ounce) package corn chips

DIRECTIONS:
1.            In a slow cooker, combine pork, chili peppers, chili powder, cumin seed, oregano, garlic salt, pepper, and water. Cover, and simmer on Low for 4 hours.
2.            Shred meat, removing any bones and fat, add beans Cover, and continue cooking for 2 to 4 more hours. Add more water if necessary.

3.            Place corn chips on serving plates. Spoon pork mixture over chips, and serve with desired toppings.

Roasted Balsamic Green Beans with Parmesan

These are quite tasty and a perfect way to use all those green beans in the garden or those frozen ones from my previous tutorial

Ingredients:
8 oz. mushrooms, sliced in 1/2 inch slices (you can use canned)
1 lb. fresh green beans, or frozen 
1 1/2 T olive oil
2 T balsamic vinegar
salt and fresh ground black pepper to taste
2 T finely grated parmesan cheese

Instructions:
Preheat oven to 450F. Wash mushrooms and let drain.While mushrooms are drying, trim ends of beans and cut beans in half so you have bite-sized pieces.  Cut mushrooms into slices 1/2 inch thick.

Put cut beans and mushrooms into a Ziploc bag or plastic bowl. Whisk together olive oil and balsamic vinegar and pour over, then squeeze bag or stir so all the beans and mushrooms are lightly coated with the mixture. Arrange on large cookie sheet, spreading them out well so beans and mushrooms are not crowded. Sprinkle with salt & pepper

Roast 20-30 minutes, starting to check for doneness after 20 minutes. Cook until beans are tender-crisp, mushrooms are cooked, and all liquid on the pan from mushrooms has evaporated. 

 Sprinkle with finely grated Parmesan. Serve hot.

National Zucchini Day & Recipe

So, I heard through the grape Zucchini "vine" that today is National Zucchini Day.

It has always been a joke in our family & community about giving away this veggie. When going to church everyone was told to roll up your windows and keep your doors locked, to keep the....... Zucchini out.  I ran across this cute idea and if we had a plant that was producing like crazy  or if I even had Zucchini growing at my place I think I would do this.

Pinterest Test: Mexican Street Corn Pasta Salad

Oh My, this is good! I think this would be a perfect 4th of July salad. Especially with county fairs upon us, this reminds me of the grilled ears of corn you can't resist.

Ingredients:
8 ounces radiatore pasta
Dressing:
1/3 cup mayonaisse
1/3 cup sour cream
zest of 1 lime
1 teaspoon chile powder, plus more for dusting top
2 tablespoons fresh lime juice plus more for serving
Salad:
3 cups corn cut from grilled corn on the cob (3-4 ears)
1 diced avocado
1/4 cup chopped green scallions
1/2 cup Cotija or feta cheese, crumbled
3 tablespoons grated Parmesan cheese
2 tablespoons fresh chopped cilantro (or parsley or basil)
coarse salt and fresh black pepper, to taste
Instructions:

  1. Cook the pasta to al dente in plenty of salted boiling water.
  2. Meanwhile whisk all the dressing ingredients together in a small bowl until smooth and creamy.
  3. Drain the cooked pasta and add to a large bowl with a tiny bit of the dressing - toss to coat, cover and refrigerate until cool.
  4. Once cooled mix in the corn, avocado, scallion, both cheeses and the cilantro. Add the dressing a little at a time tossing gently to coat. Season to taste with salt and pepper.
  5. Serve chilled or at room temperature with a dusting of chile powder and lime wedges.

The Mexican Bierock

This is like the Mexican version of a bierock. Again, what does my picture not look as good as the original one here with the recipe? Anyway, don't let the picture stop you from making these!

I will admit the filling and folding of the bun was the most difficult part but once you get the hang of it.....

Ingredients
1 package of refrigerated biscuits- I used whole wheat, but I think the corn ones would be awesome. 
1 lb ground beef
1 packet taco seasoning
1/2 cup salsa
1 cup shredded cheddar cheese
(1) 8 oz package of cream cheese, room temp
4 tbsp melted butter- skipped this to save on a few calories :)

Instructions
1. Brown the ground beef and crumble.
2. Drain fat from meat.
3. Add taco seasoning and prepare as stated on the packet.
4. In a medium sized mixing bowl, add cream cheese and salsa.
5. Blend with with mixer until smooth.
6. Roll out biscuits so they are flat and somewhat thin.
7. Spread 1 tbsp cream cheese mixture onto the biscuit.
8. Add a spoon full of taco meat on top of the cream cheese mixture.
9. Top with shredded cheddar cheese.
10. Seal edges and place on a greased cookie sheet.
11. Repeat with all biscuits.
12. Brush tops of biscuits with melted butter.
13. Bake at 350 degrees for 13-16 minutes, or until tops are lightly browned.
14. Enjoy!

Enchilada Pasta-One Pan Wonder

Wow this is good. I found the original recipe here, and then did some tweeking. My picture doesn't look as good as the original picture, but it tastes amazing and that's what matters. My family wanted to keep eating and eating, but decided they didn't need to over-stuff themselves on this tasty dish.  
It is simple and quick which is great in my life. I partially cooked the pasta while I was browning the meat to speed up the process even a little more. 

Ingredients
  • 2 tablespoon of extra virgin olive oil
  • 2 cloves of garlic, minced
  • 1/2 of a small onion, diced
  • 1.25 pounds of taco seasoned ground  meat (beef, turkey, pork, your choice)
  • 2 cups of low-sodium chicken broth
  • 1 19oz can of red enchilada sauce
  • 8oz (about 2 1/2 cups) of dried pasta (any kind works, I partially cooked this to speed up the process) 
  • 1 cups of freshly shredded Colby Jack cheese
  • 1/2 cup salsa
  • 4 oz cream cheese
  • green onions
  • black olives
  • Optional add ins: corn, black beans, green chili
Instructions
  1. In a large skillet or sauté pan, sauté garlic and onions in olive oil over medium low heat until softened.
  2. Add ground  meat and cook, breaking meat up with a wooden spoon until browned.
  3. Once  meat is cooked through, add pasta, chicken broth and enchilada sauce to pan.
  4. Bring to a boil, then reduced heat to low and cover.
  5. Cook on low, with pan covered for about 15 minutes.
  6. Then remove lid and let simmer for additional 5 minutes until pasta is tender and sauce has reduced.
  7. Remove from heat and stir in cream cheese & salsa.
  8. Top pasta with additional cup of cheese and melt under broiler for a minute or tow, or place lid back on pan and let heat from the pasta melt the cheese.
  9. Garnish with black olives and green onions.

Bourbon Ham Sliders

HOLY MOLY these are so stinking yummy- developed by yours truly. I have seen other similar recipes but this is "the one"


1 can Grands Jr Butter Tasting Biscuits (10 count)
leftover ham slices ( great way to use up leftovers after the Holidays)
10 slices of sharp cheddar cheese
Whole grain mustard
Bayou Bourbon Glaze from Tastefully Simple
Miracle Whip

Preheat oven to 400.

Lightly spray a 9-inch pan with cooking spray.  Set aside.

Separate each biscuits into two layers.   Place half of the biscuits in pan, spread with mustard, top with ham  in the bottom of prepared pan. Spread about 1 Tablespoon of Bourbon sauce on top of ham. Place a slice of cheese on top of ham. Then spread a light layer of Miracle Whip on the  biscuit and then place that on top.  

Bake 12-15 minutes, until golden brown. Optional to drizzle a little Bourbon sauce on top while still hot. Serve immediately.

Tomato & White Bean Soup

I found this tasty recipe in the magazine, All You, and I made a few tweeks.  I was looking for a soup that would go well with sandwiches and this seemed like a good fit. It would be heavenly with grilled cheese.
 Sorry the picture isn't quite as fancy as it could be, trust me it is amazing!


Ingredients

2 tablespoons olive oil

1 onion, chopped 

1 rib celery, chopped 

2 carrots, chopped 

1 (8oz) can tomato sauce

2 15.5-oz. cans white beans, such as cannellini, drained and rinsed

3 cups low-sodium chicken broth

Salt and pepper

1/4 cup pesto, optional ( I didn't use this)

1 1/2 cups garlic croutons, optional


Preparation


1. Warm oil in a large pot over medium-high heat. Add onion, celery and carrots. Cook, stirring frequently, until vegetables have softened, about 5 minutes. Stir in tomato paste and beans. Pour in broth, season with salt and pepper, increase heat to high and bring to a boil. Reduce heat to medium and simmer, stirring often, until vegetables are tender, about 10 minutes.

2. Remove soup from heat and allow to cool slightly. Working in batches, carefully puree soup in a blender until thick but still a bit chunky. Return soup to pot and bring to a simmer over medium heat. Season with salt and pepper. If soup is too thick, thin with additional broth. Serve hot, topped with pesto and croutons, if desired.

Stay warm~Jalapeno Popper Chicken Chili

As most of you are aware the Midwest is experiencing a cold spell to say the least. Farmers and ranchers aren't slowing down or taking a day off to care for their livestock though. This is a great recipe to help you warm up. I found this on Pinterest (of course) and did a few alterations here and there. 

Ingredients
3 tbsp extra virgin olive oil
1 small onion, diced
5 jalapeno peppers diced, seeds removed (leave some seeds for extra heat) I used about 10 jarred jalapeno slices.
1 T garlic, minced
salt and fresh ground black pepper
3 cups cooked shredded chicken
2 teaspoons chile powder
1 teaspoon ground cumin
1 teaspoon oregano
pinch of crushed red pepper
1 (10 oz) can dice tomatoes with green chilies
1 + 1/2 cups chicken broth
1 (14 oz) can cannelloni or navy beans, drained ( 1 time I used black beans)
1 (14 oz) can corn, drained
8 ounces cream cheese
1 pound bacon, cooked crispy and crumbled, divided


Instructions
In a large saucepan (deep enough for soup) heat 2 tbsp extra virgin olive oil over medium heat and sauté onion, jalepeno, and garlic until tender.
Season the chicken pieces with salt and pepper, then add to the saucepan adding another tablespoon of olive oil as well. Add cumin, chili powder, oregano, and crushed red pepper. Toss chicken and seasonings together and lightly brown chicken on all sides.
Stir in can of diced tomatoes, chicken broth, corn, and cannelloni beans and increase heat to bring to a simmer. Let simmer for 30 minutes.
Stir in cream cheese and stir until completely melted. Stir in 1/2 of the crumbled bacon. Remove from heat. Season with salt and pepper as needed. **Add more chicken broth if too thick.
Serve and garnish with cheddar cheese and the rest of the crumbled bacon.

Eggnog Pound Cake

I made this tasty little cake this past Friday for a Christmas party.Quote from my best friend, " O my gosh,Its really good, it tastes just like eggnog!"

 I made a few tweaks here and there!

Ingredients

  • (16-oz.) package pound cake mix 
  • 1 1/4 cups eggnog
  • 2 eggs
  • 1/2 tsp ground nutmeg
  • 1/2tsp vanilla

Preparation

  1. 1. Preheat oven to 350°. Beat all ingredients together at low speed with an electric mixer until blended. Increase speed to medium, and beat 2 minutes. Pour into a lightly greased 9- x 5-inch loaf pan.***(This wasn't big enough, so one 9x5, and then 2 mini loaves)
  2. 2. Bake at 350° for 1 hour to 1 hour and 5 minutes or until a long wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan to wire rack, and cool completely (about 1 hour).

Hot Jalapeño Corn Dip

This is the time of year for Christmas parties, and parties mean food!

I found this tasty looking Hot Jalapeño Corn Dip over at The Sunny Side of Life and decided to give it a try. Personally, I would add more Jalapeños make it a little more spicy. Also, it isn't too shabby cold before baked.

Ingredients
  1. 2 cans sweet corn, drained
  2. 2 jalapeño peppers, seeded and minced (Or equivalent of canned or jar version. More or less to your personal taste)
  3. 2 green onions, chopped
  4. 1/2 cup sour cream
  5. 1/2 cup mayonnaise
  6. 1/2 cup shredded monterey jack cheese
  7. 1/2 cup cheddar cheese
  8. 1 teaspoon garlic powder
  9. 1 teaspoon onion powder
  10. 1/2 teaspoon chili powder
  11. dash of hot sauce
  12. salt and pepper to taste
Instructions
  1. Preheat oven to 375˚.
  2. In medium bowl, mix together mayo, sour cream, spices, and hot sauce.
  3. Fold in corn, jalapeño peppers, onions, and 3/4 cups of blended cheese.
  4. Place in greased 2 qt. baking dish, and top with remaining 1/4 cup cheese.
  5. Bake in preheated oven for approx. 20 min. or until cheese is golden brown and bubbly.
  6. Serve with tortilla chips.
Notes
  1. You can substitute fresh or frozen corn for the canned corn. I simply used what I had on hand.
  2. You can also substitute 1 cup of mexican blend cheese for the monterey jack and cheddar.

Bacon Wrapped Sausage Stuffed Jalapeño Poppers

I adapted this from several recipes.Pretty bummed my picture doesn't look as good as all those others, but it tasted AWESOME, and that's what matters!

Ingredients
1      packages mini  sausage-Lil smokies
1 (8 ounce) packages cream cheese, softened
½ cup shredded cheese
1 tsp garlic powder
1T finely chopped onions
10 jalapeno peppers
1 pound sliced bacon, cut in half

Directions
1.    Preheat oven to 375 degrees F 
2.    Mix shredded cheese, garlic, and chopped onions with the cream cheese.
3.    Cut jalapenos in half lengthwise. Remove the seeds. Stuff each jalapeno half with equal portions of the cream cheese mixture, lay a lil smokie on top. Wrap with half slices of bacon. Secure bacon with toothpicks.
4.    Arrange wrapped jalapenos in a large, shallow baking dish. Bake in the preheated oven 20 minutes, or until the bacon is evenly brown.
